Taro Leaf and Chicken Soup
Ingredients:
2 tablespoons vegetable oil
1 Maui (sweet) onion, sliced
2 cloves garlic, minced
2 tablespoons ginger root, minced
8 cups chicken stock
12 taro leaves, deveined
16 ounces chicken meat, cut into strips
1 tablespoon Hawaiian salt
1 teaspoon ground black pepper
Directions:
1. In a 1-gallon soup pot, sauté the onion, garlic and ginger in the oil until golden brown.
2. Add the stock and bring to a boil.
3. Chop the taro leaves into bite-size pieces, add to the boiling stock and simmer 25 minutes.
4. Add the chicken, salt and pepper, cook 10 minutes more and serve.
