Lu Pulu (Corned Beef in Taro Leaves)
Ingredients:
1 banana leaf
12 young taro leaves
1/2 (12-ounce) can corned beef
1/2 onion, chopped
Chopped tomato (optional)
1/2 cup thick coconut cream
Directions:
1. Spread out the banana leaf and overlap the taro leaves on top.
2. Place the corned beef in the center and add the onion (and tomato, if using).
3. Hold the taro leaves together to form a cup and pour in the coconut cream.
4. Close the taro leaves around the filling and fold the banana leaf around them. Tie with a strip of banana leaf rib.
5. Boil or bake 1 hour.
Variation:
Use 1/2 pound of any meat instead of corned beef: beef, fish, lamb or chicken.
