Palusami (Taro Leaf Bundles)
Palusami (Taro Leaf Bundles)
Use only young, fresh taro leaves, or substitute spinach. Serve with taro, breadfruit or any starchy food.
Makes 3 bundles
Ingredients:
9 taro leaves, halved
1/2 cup finely chopped onion
1 cup coconut cream
1/2 teaspoon salt
Directions:
1. Mix the coconut cream, onion and salt.
2. Stack about 6 taro leaf halves in the palm of one hand. Cup your hand and press down in the center so the leaves form a cup.
3. Ladle in about 1/2 cup of the coconut mixture and fold the leaves together at the top to seal in the liquid. Wrap in a cupped piece of foil. Repeat with the rest.
4. Bake at 350°F about 30 minutes. Cool slightly, remove the foil and serve.
Tip:
To lighten, replace up to half the coconut cream with whole or low-fat milk.
