Shred Me up Slaw
Ingredients:
carrots, raw
beets, raw
kale, raw
seeds, pumpkin and squash seeds, whole, roasted, without salt
lemon juice, raw
salt, table
Directions:
In bowl, toss together vegetables.
Add lemon juice and salt.
Toss well and set aside for 10 minutes or until softened.
Variations: use lime juice instead of lemon juice.
Use chard instead of kale.
For a boost of protein, add 3 tablespoons raw shelled hemp seeds.
