Erissery (Plantain Coconut Curry)
Erissery (Plantain Coconut Curry)
Ingredients:
Green plantains, cubed
1 teaspoon turmeric powder, divided
1 teaspoon chili powder
Salt to taste
1/2 cup grated coconut (desiccated can be used)
1/2 teaspoon cumin seeds
1 teaspoon oil
1/4 teaspoon mustard seeds
1/4 teaspoon urad dal
1 tablespoon coconut, for garnish
1/4 teaspoon black pepper
A few curry leaves
Directions:
1. Soak the plantains in warm water mixed with 1/2 teaspoon turmeric 10 minutes. Drain.
2. Cook the plantains with the remaining turmeric, chili powder, pepper and salt.
3. Grind the coconut well with the cumin, add to the plantains and simmer.
4. Heat the oil and pop the mustard seeds. Add the urad dal and garnish coconut and stir until browned.
5. Add to the erissery and mix in the curry leaves.
