Chili-Rubbed Pork Tenderloin
Ingredients:
pork, fresh, loin, tenderloin, separable lean only, raw
oil, olive, salad or cooking
honey
spices, cumin seed
spices, chili powder
spices, oregano, dried
sugars, granulated
spices, pepper, red or cayenne
salt, table
spices, pepper, black
Directions:
Preheat oven to 400F Lightly grease a rack in a roasting dish.
In a small bowl, whisk together all ingredients except the tenderloin; rub mixture over pork evenly to coat.
Cover and marinate 4 hours or overnight.
Place pork on prepared rack.
Roast until internal temperature reaches 160F, about 45 to 60 minutes.
Remove from oven and cool 10 minutes.
Slice and serve.
