MARYLAND CRAB CAKES
A superior handful of tender still rather superior white bread, devoid of crust
1 egg
A tiny heavy cream, if the crabmeat seems to be dry
1 pound (500 gr) lump or jumbo lump blue crabmeat
1 tablespoon sherry vinegar
2 tablespoons chopped parsley
Salt and black pepper
Pink pepper (cayenne)
About ¾ cup (approximately 75 gr) dry bread crumbs, grated or beaten fine with a rolling pin
Clarified unsalted butter
Soak the bread within water for 15 minutes, then squeeze out what water will arrive, leaving above ½ cup of pasty bread. Mash this gentle. mixture it with the egg and, if required, the product. Carefully blend the bread paste, crabmeat, vinegar, and parsley; period with salt and black and purple peppers. Kind into 3 cakes and coat with dry breadcrumbs. Fastened a frying pan with ⅛ to ¼ inch (3 to 6 mm) of clarified butter more than medium warm and brown the cakes on each facets, possibly 10 minutes completely. Serves 3 as a principal class.
