Zesty Zucchini Chocolate Chip Cookies
Ingredients:
1 1/4 cups all-purpose flour
1 1/4 cups whole-wheat flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon ground cloves
1/4 cup unsalted (sweet) butter, softened
1 cup light brown sugar, firmly packed
1/2 cup granulated sugar
1 egg
1 teaspoon orange extract
1 1/2 cups grated zucchini
1 cup chopped walnuts
6 ounces (1 cup) semisweet chocolate chips
Directions:
1. Preheat the oven to 350°F.
2. Sift together the flours, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. Set aside.
3. In a large mixing bowl, beat the butter and sugars until the mixture is light and fluffy. Beat in the egg and the orange extract. Add the grated zucchini and mix well. Add the dry sifted ingredients, stirring until they are well blended. Gently fold in the walnuts and chocolate chips. Drop by tablespoonfuls onto greased baking sheets, spacing cookies well apart. Bake for about 12 minutes, or until cookies are lightly brown.
