Hash Brown Mountain Man Breakfast
Serves 6
Ingredients:
1/2 pound bacon (or precooked sausage)
1 medium onion
1 (2-pound) bag hash brown potatoes
1 dozen eggs
1/2 pound grated Cheddar
1 small jar salsa (optional)
Directions:
1. Preheat a 12-inch Dutch oven with 6-9 coals on the bottom and 12-15 on top.
2. Slice the bacon and onion into small pieces and brown in the oven until the onions are clear.
3. Stir in the hash browns and cover. Stir occasionally to brown and heat the potatoes, 15-20 minutes.
4. Scramble the eggs in a separate container and pour over the hash browns. Cover and cook until the eggs start to set, 10-15 minutes.
5. Sprinkle the cheese over the eggs, cover and heat until the eggs are completely set and the cheese is melted.
6. If desired, cover with the salsa and cook 3-5 minutes more. Slice and serve like quiche.
