Hearty Pasta
Hearty Pasta
Ingredients:
2 tablespoons butter
2 teaspoons chopped fresh parsley, for garnish
Directions:
1. In a large skillet, melt the 4 tablespoons butter and sauté the bell peppers,
onion, and garlic for about 8 minutes, or until the vegetables are soft. Set aside.
2. Cut the chicken into bite-size pieces and sauté in the olive oil until cooked
through. Using a slotted spoon, transfer the chicken pieces to the pan with the
sautéed vegetables.
3. To make the sauce, in the same pan you used to cook the chicken, sauté the
mushrooms just a bit, until they absorb some of the liquid. Then add the tomato,
chicken broth, salt, cayenne, paprika, white pepper, and thyme. Simmer for 10
minutes, until the sauce is slightly thickened.
4. Add the simmered sauce to the chicken and vegetables and simmer for another
5 minutes, until everything is heated through and the flavors are well combined.
5. Toss the pasta with the 2 tablespoons butter and plate individually. Top with
the chicken and sauce, garnish with the parsley, and serve.
Serves 2 as an entrée or 4 as a side
dish
