Brown Rice Pasta, Zucchini, Asparagus, and Salmon

Ingredients:
1 - 2 packages of brown rice pasta (depending on how many you are serving)
2 zucchinis diced – yellow or green or one of both
1 bunch of asparagus diced
2-4 salmon fillets (depending on how many you are serving)
Olive oil
Dried oregano to taste
Sea salt / Real salt, pepper, parsley to taste
Kitchen Items Required:
Medium Pot
Steaming Pot
9 × 13 Glass Baking Dish
Knife
Cutting Board
Colander
Other Options to Consider: Instead of serving the salmon on the side of the pasta dish
you can also break it up into small pieces and include it with the pasta as one big dish.
Add grape tomatoes to this dish to mix it up a bit and if you like garnish this dish is best
with chopped parsley.
Salad Option to Consider: The cucumber, tomato, avocado salad on goes really
great with this dish.
Steps:
1. Get all ingredients and kitchen items required on the counter.
2. If salmon is still frozen, soak filets in a sink filled with cool water – this will take
about 10 – 15 minutes.
3. Pre-heat oven to 350 degrees for Salmon.
4. Put water for pasta on stove (high heat) to begin boiling (use 9.5 alkaline water if you
have a water machine).
5. Begin cutting / cleaning your zucchini and asparagus.
6. Once water starts to boil, cook pasta per directions on package stirring occasionally.
7. Add zucchini and asparagus to steaming pot with one inch of water (use 9.5 alkaline
water if you have a water machine).
8. Turn steaming pot on medium high heat and cook for 12 -15 minutes – once you
smell the greens turn them off.
9. Add thawed salmon to baking dish, drizzle olive oil over each fillet, season with sea
salt / Real salt and oregano to taste.
10. Cover baking dish with tin foil and bake for 20 – 25 minutes on 350 degrees.
11. Once pasta is done, drain using a colander and put back into pot.
12. Once veggies are done add to cooking pot with pasta.
13. Add olive oil to pasta mixture as desired, do not be afraid to add at least 1 cup if not
more.
14. Add sea salt, Real salt, oregano, parsley and pepper to taste and mix thoroughly.
15. While you are waiting for salmon to be done, make your salad.
16. Serve pasta mixture next to salmon on the plate or mix it in.
17. Cleanup consists of your pasta pot, steaming pot, baking dish, colander (rinse), knife
(rinse), and cutting board.

We love these meals because they are so easy to prepare yet they are packed with so much
nutritional goodness. Make sure the tofu you buy says non-GMO on the package. We
usually make brown rice on nights where we are home for a short while and then need to
leave again before coming back for dinner. This gives the brown rice the time it needs to
cook while you are away.
Prep / Cooking Time: 10 minute preparation, 90 minutes cooking (only because of the
brown rice which you can put on and walk away).
