Glazed Baked Ham with Raisin Sauce

Glazed Baked Ham with Raisin Sauce

Ingredients:
Ham
Brown sugar
Ground cloves
Cinnamon
Orange juice concentrate
Whole cloves (optional)

Raisin Sauce:
2 cups apple cider or juice
3 tablespoons cornstarch
1 cup raisins
2 tablespoons margarine or butter

Directions:
Heat the oven to 325°F. Mix the brown sugar, ground cloves, cinnamon and orange juice concentrate.
Place the ham fat side up on a rack in a shallow roasting pan. Insert a meat thermometer into the thickest part, not touching bone or fat.
Spread half the juice mixture on the ham. Roast uncovered until the thermometer reads 135°F, 1 1/2 to 2 hours.
About 30 minutes before the ham is done, remove it and pour off the drippings. Score the fat in a diamond pattern 1/4 inch deep and insert a whole clove in each diamond if desired.
Spread the remaining juice mixture on the ham and bake 30 minutes more. Cover and let stand 10 minutes.
For the raisin sauce, gradually stir the cider into the cornstarch in a 1-quart saucepan. Add the raisins and margarine. Cook over medium heat, stirring constantly, until it thickens and boils. Boil and stir 1 minute. Serve warm with the ham.
