Stuffed Spaghetti Squash Shells
Stuffed Spaghetti Squash Shells
Ingredients:
1/2 spaghetti squash per person
Per squash half:
1/4 cup cooked ham chunks
1/2 cup cooked peas
1/2 beaten egg yolk
1/4 cup cream
1/4 cup Parmesan cheese
Directions:
1. Cook and drain the squash. Separate out the spaghetti strands, handling the shells carefully so they don't tear. Set the shells aside to drain.
2. In a bowl, mix the squash strands with the rest of the ingredients.
3. Mound the mixture back into the squash halves and microwave or bake until heated through.
Tip:
The easiest way to cook spaghetti squash is in the microwave: half a squash, cut lengthwise, covered and vented, about 8 minutes on high. The seeds are good toasted and salted like pumpkin seeds, and finely chopped squash can replace zucchini in cakes and quick breads.
