Spicy Falafel Patties

Ingredients:
1 tablespoon flour
1 teaspoon cumin

Directions:
3⁄ teaspoon garlic powder

3⁄ teaspoon salt

Egg replacer for 1 egg
1⁄ cup chopped fresh parsley

2 tablespoons chopped fresh cilantro (optional)
Pita bread
1⁄ tomato, sliced

Lettuce, for garnish
2 tablespoons Roasted Red Pepper Hummus (see Chapter 3)
1. Preheat oven to 375°F.
2. Place chickpeas in a large bowl and mash with a fork until coarsely mashed or
pulse in a food processor until chopped.
3. Combine chickpeas with onion, flour, cumin, garlic, salt, and egg replacer, mashing
together to combine. Add parsley and cilantro if desired.
4. Shape mixture into 2" balls or 1"-thick patties and bake in oven for 15 minutes or
until crisp. Falafel can also be fried in oil for about 5–6 minutes on each side.
5. Stuff falafel into a pita bread with some sliced tomatoes and lettuce and top it off
with Roasted Red Pepper Hummus.
