CRUNCHY BREADSTICKS
Ingredients:
3 to 3½ cups all-purpose flour
2 packages (¼ ounce each) or 2 scant tablespoons active dry yeast
1 tablespoon sugar
1 teaspoon salt
Directions:
12⁄ cups warm water (105° to 115°F)

¼ cup olive oil or vegetable oil, plus additional for coating the breadsticks
Kosher salt, sesame seeds, or poppy seeds (optional)
IN A FOOD PROCESSOR or in a large bowl, combine 3 cups of the flour, the yeast, sugar,
salt, and warm water. Add the oil and process or mix until the dough is smooth and
satiny and the flour has been incorporated. Add more flour, if necessary, to make a
soft dough that will pull away from the sides of the food processor or bowl.
Preheat the oven to 300°F. Shape the dough into a rough log. Using a sharp knife, cut it
crosswise into 20 pieces. Roll each piece of dough until it is 16" to 20" long or as
long as your baking sheet. Coat each stick generously with oil and place side by side
about 1" apart on 2 baking sheets. Sprinkle with salt or seeds (if using). Bake until
lightly browned and crispy, 40 to 50 minutes. Cool on racks.
