Chicken Cacciatore

Chicken Cacciatore

Ingredients:
2 tablespoons olive oil
4 free-range, organic chicken breasts or 1 whole chicken, cut in pieces
1 teaspoon minced garlic
1 small onion, cut in rings
1 cup green bell pepper, cut in rings
2 (14-ounce) cans diced tomatoes, drained
1 (8-ounce) can tomato paste
1 teaspoon marjoram
Freshly ground black pepper, to taste

Directions:
Heat the olive oil in a large skillet. Add the chicken and brown it on all sides,
about 10 minutes. Add the garlic, onions and peppers, and cook an additional 5
minutes. Transfer the chicken and vegetables to a slow cooker. Season with
freshly ground black pepper to taste.
Add the remaining ingredients and cook on low for 6-8 hours. Serve with
steamed spaghetti squash for a more traditional Italian meal.
