Maple Walnut Chicken

Ingredients:
4 boneless, skinless, free-range, organic chicken breasts
1 tablespoon olive oil
1 tablespoon fresh thyme
1/4 teaspoon freshly ground black pepper
1/2 cup walnuts, chopped
1/3 cup apple cider vinegar
3 tablespoons pure maple syrup
1/2 cup water

Directions:
Combine the olive oil with the thyme and pepper.
Rub mixture all over the chicken and let stand for 30 minutes.
While waiting, toast walnuts in a non-stick skillet over medium-low heat for 4-
6 minutes.
Remove walnuts, add chicken and turn up the heat to medium.
Cook until chicken is done, about 12 minutes, turning once.
Remove chicken to a serving plate.
Whisk the vinegar into the chicken drippings, then add the maple syrup and
water.
Simmer for a few minutes until it thickens, add walnuts, then pour over
chicken and serve.
