Hungarian Beef Stew

Hungarian Beef Stew

Ingredients:
2 tablespoons butter
1 pound free-range, organic, grass fed beef stew meat
1 onion, chopped
1 red or yellow bell pepper, seeded and chopped
2 cans diced tomatoes
1 cup water
1 small can tomato paste
1/2 teaspoon paprika
1/2 teaspoon thyme
1/4 teaspoon crushed red pepper
Freshly ground black pepper, to taste

Directions:
Melt the butter in a large saucepan over medium heat. Add the stew meat and
cook until browned, turning to brown all sides of the meat. Add the onion and
pepper and continue cooking an additional 5-8 minutes, or until the vegetables
are tender.
Stir in the remaining ingredients and bring to a boil. Lower the heat to
medium-low, cover and simmer for 45 minutes, or until tender. Season with
freshly ground black pepper to taste.
Serve hot.

Serves 4
Traditional meatloaf recipes call for breadcrumbs or crackers to bind the meat.
This delicious alternative uses potato starch instead.
