Hearty Paleo Stew

Ingredients:
4-6 pounds free-range, organic, grass fed beef roast, cubed
4 slices bacon, diced
1 small onion, finely chopped
2 garlic cloves, minced
1 teaspoon dried thyme
1 cup diced tomatoes
2 large carrots, diced
2 turnips, diced
1-2 cups beef or chicken stock, preferably homemade
Freshly ground black pepper, to taste

Directions:
Heat a large stockpot and add bacon . Cook until almost crisp, and add the
cubed beef. Sear on all sides until golden brown.
Add onion and garlic, cook until both are soft, add carrots, turnips, tomatoes
and thyme. Simmer 5 minutes. Season with freshly ground black pepper to taste.
Add stock and bring to a boil. Reduce heat and simmer 4–5 hours on low heat,
or until beef is melt-in-your-mouth tender and serve.
