Lemon Garlic Flounder
Lemon Garlic Flounder
Ingredients:
¼ c. extra virgin olive oil
2 Tbsp. lemon juice
2 cloves garlic, minced
½ tsp. salt
¼ tsp. pepper
1 onion, chopped
20 oz. frozen spinach
24 oz. flounder
2 tsp. lemon zest
Directions:
1. Preheat broiler to high. Line a baking sheet with aluminum foil and lightly
grease with nonstick spray.
2. In a bowl, combine 3 Tablespoons olive oil, lemon juice, garlic, salt and
pepper.
3. In a large skillet, heat remaining olive oil over medium heat. Add onion and
sauté until softened, about 5 minutes.
4. Add frozen spinach to skillet. Cover and cook for about 8 minutes.
5. Remove cover and drizzle in a little olive oil and lemon juice mixture. Cook for
4 additional minutes, or until remaining liquid has cooked off. Remove from heat
and cover.
6. Arrange flounder on prepared baking sheet and season with additional salt
and pepper. Top with remaining olive oil and lemon juice mixture.
7. Place baking sheet in oven for 6 minutes.
8. Divide spinach between plates and top each one with a filet of flounder.
