Poached Flounder with Lemon Mustard Sauce
Serves 4

Ingredients:
Fish:
2 to 3 pounds flounder fillets
1 medium onion
1 green bell pepper
1 red bell pepper
3 slices lemon
2 bay leaves
Water
Salt and pepper to taste

Sauce:
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon dry mustard
1 lemon
2 cups reserved liquid from fish

Directions:
1. Cut the bell peppers in strips and the onion in slices. Place in a large skillet with the lemon slices and bay leaves. Add water to about 1 to 1 1/2 inches deep.
2. Cover the skillet tightly and bring to a boil. Arrange the fish in a single layer in the skillet. Salt and pepper to taste.
3. Simmer 5 to 8 minutes, until the fish is flaky and tender. Remove and discard the bay leaves.
4. For the sauce: In a small saucepan, melt the butter and slowly add the flour. Stir until smooth.
5. Drain the remaining liquid from the fish and add to the flour mixture, adding water to make 2 cups if needed. Bring to a boil.
6. Add the mustard and the juice of the lemon. Add salt and pepper to taste. Simmer until thickened. Serve over the fish.
