Ingredients:
1 cup (250 ml) non-dairy milk (of choice)
1 tablespoon apple cider vinegar
1 cup (125 g) all-purpose flour
1 cup (150 g) cornmeal
½ teaspoon baking soda
2 teaspoons baking powder
1 teaspoon sea salt
¼ cup (60 ml) vegetable oil
⅓ cup (25 g) torn kale leaves
2 tablespoons fresh basil
2 tablespoons fresh chives
1 small chili (optional)
Directions:

Preheat the oven to 350°F (180°C). Grease the holes of a muffin tin.

Mix the milk and vinegar together in a small bowl and set aside to curdle.

Meanwhile, mix together the flour, cornmeal, baking soda, baking powder, and salt
in a bowl. Whisk the oil into the milk and then add to the dry ingredients, mixing well
to blend.

Finely mince the kale, basil, chives, and chili, if using, and gently fold into the
batter.

Scoop the mixture into the muffin tin and bake for about 20 to 25 minutes, or until a
toothpick inserted into a muffin comes out clean.
