VITAMINS A, B6, C, K
Ingredients:
¾ cup (120 g) buckwheat groats (not kasha)
¼ cup (35 g) pumpkin seeds
¼ cup (35 g) shelled hemp seeds
¼ cup (30 g) dried cranberries
2 tablespoons spirulina
¼ cup (3 or 4) medjool dates, pitted and soaked in ½ cup (125 ml) water
4 tablespoons maple syrup

Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.

Combine the oats, buckwheat, pumpkin seeds, hemp seeds, cranberries, and
spirulina together in a large mixing bowl.

Drain the dates, reserving 4 tablespoons of soaking water, and place in a food
processor with the maple syrup and reserved water. Blend until smooth. Pour this into
the mixing bowl and stir to coat everything.

Spread the mixture out in a single layer on the prepared baking sheet and bake for
20 minutes, stirring halfway through, until evenly and lightly browned. Remove from
the oven, leave to cool, and then break up into clusters. The granola can be stored in
an airtight container for up to two weeks. Serve with fresh raspberries if you’d like.
