MAX AND ERMA’S
Ingredients:
2 cups half-and-half
4 cups heavy cream
Directions:
11/ cups instant vanilla pudding mix

4 bananas, cut into 1/ -inch-thick slices

Two 9-inch vanilla wafer piecrusts, homemade or purchased
1 cup chocolate syrup
1. Combine the half-and-half, 2 cups of the heavy cream, and the vanilla pudding
mix in a large bowl.
2. Using an electric mixer, beat on low speed for 1 minute to combine all the
ingredients. The mixture should just start to thicken.
3. Increase the speed to medium for another minute as it thickens a bit more.
4. Bring the speed of the mixer up to high and beat for another minute or so. Do
not overmix, or the filling will deflate.
5. Using one quarter of the bananas slices, arrange a single layer of banana in
each pie shell. Spoon just enough of the filling into the shells to cover the banana
slices.
6. Arrange another quarter of the bananas slices over the filling and spoon some
filling over it. Repeat this process one more time, so that there are 3 layers of
banana and 3 layers of filling in each pie.
7. Using a metal spatula dipped in water, mound the top layer of filling slightly
toward the center of each pie so that it is a little higher than the crust.
8. Whip the remaining 2 cups heavy cream and spoon it over the pies. Drizzle the
chocolate syrup over the whipped cream and garnish with the remaining banana
slices.
