Homemade Toaster Pastries
This recipe is a little labor intensive, but certainly worth the effort. Instead of the cardboard toaster pastries
we had as kids, this version provides fresh flavors (without the additives) and the fragrant smell of grandma’s
home-baked pies. They are treats, though, so serve them sparingly.
6 seRvings 1. In the bowl of a food processor, combine the flours and
salt. Cut the cold butter into ½" cubes. Scatter the butter
1¼ cups whole-wheat flour
around the bowl. Place the bowl of flour and butter in
1¼ cups unbleached all-purpose
the freezer for 10 minutes (this will help ensure the mix-
flour, plus more for rolling
ture stays cold).
1 teaspoon salt
2. Remove the bowl from the freezer and pulse the mixture
2 sticks (1 cup) cold unsalted butter
until crumbly. Using the feed tube, slowly pour in the ice-
¹⁄³ cup ice-cold water cold water until blended, about 10–20 seconds. At this
1 large egg point the mixture should no longer be crumbly, but more
doughy. Remove the dough from the bowl and divide in
6 tablespoons fruit preserves
half. Quickly shape into 2 disks. Wrap each disk in wax
paper and refrigerate for at least 45 minutes or up to 2
days.
3. Preheat oven to 375°F. Remove the dough from the
refrigerator. Let stand on the counter for about 10–15
minutes or until pliable enough to roll out. Meanwhile,
line a large baking sheet with parchment paper or sili-
cone liner. Beat the egg with 1 tablespoon of water. Set
