Tortilla Factory Breakfast Burrito

Ingredients:
Tortilla – La Tortilla Factory / Tortillas Rosario most important thing is buy tortillas
that have fewer ingredients and no sugars
1 – 2 mini sweet bell peppers – red, yellow, or orange
½ can of organic beans – pinto, garbanzo, red (Westbrae brand)
1 handful of yellow rice shredded cheese
½ avocado
1 – 2 scoops of salsa – try Drew’s Salsa it has no chemicals, preservatives, or sugars
Seasonings: sea salt / Real salt and pepper to taste
Kitchen Items Required:
Fry Pan
Knife / Spoon
Cutting Board
Other Options to Consider: Use green bell peppers instead of the red, yellow and
orange. Use any other vegetables you love (like onions for example) – get creative with
this one. Add other spices as well like pepper or cumin. Mix it up to keep the burrito
different and fresh.
Steps:
1. Slice bell peppers in thin slices and add bell peppers and canned beans to fry pan.
2. Add water to cover bottom of fry pan and put on stove on medium high heat to steam
the peppers and the beans for 3 – 4 minutes.
3. Once peppers are slightly soft (water will have evaporated from pan) pour pepper and
bean mixture into bowl and season with sea salt.
4. Dry out pan and add tortilla to it.
5. Sprinkle rice cheese evenly over tortilla.
6. Put back on stove medium-high heat and cover pan – let warm for 3 – 4 minutes.
7. While tortilla is warming with cheese cut open your avocado.
8. When tortilla is warmed remove from pan and add to plate.
9. Scoop in the peppers and bean mixture and add your avocado and salsa.
10. Fold like a burrito and enjoy!
11. Rinse out pan and let dry.
Trail Mix
This trail mix makes a great snack at any time day or night. You have to prep it yourself as
there is nothing on the market similar to this or as healthy. We purchase the ingredients
from the bulk section of the store and then mix it ourselves at home. It is really important
to purchase these ingredients RAW – that means not roasted and not salted. The minute a
nut or seed is roasted it turns into a trans-fat and becomes bad for you. And the salt they
use to salt them is regular table salt which you need to avoid.
In addition, when eating raw seeds and nuts you want to be sure to store them in the fridge
as they will go rancid in a cabinet or pantry. We usually prepare a nice size container and
eat it over the course of a month. It is nice to have such a healthy snack at your fingertips.
Sometimes when we are in a hurry or know we will be out and about for a while we will
put a handful in a small plastic bag and throw it our purse or briefcase. Sometimes we’ll
just grab the whole container and bring it with us to ballgames, or other extracurricular
activities.
Prep Time: 5 minutes at the store, 5 minutes at home.
