Venison with plums

Ingredients:

500g/1lb 2oz venison fillet, lower into
1cm/1⁄2within just strips
4 plums, halved, stoned and sliced
1 teaspoon chopped fresh new sage
6 spring onions, lower into 2.5cm/1inside lengths
1 tablespoon cornflour
2 tablespoons recently squeezed orange juice
150ml/5fl oz chicken stock
4 tablespoons port
1 tablespoon redcurrant jelly
1 tablespoon brandy

Directions:
