Pork Piccata
Ingredients:
pork, fresh, loin, tenderloin, separable lean only, raw
wheat flour, white, all-purpose, unenriched
oil, olive, salad or cooking
cornstarch
soup, chicken broth or bouillon, dry
lemon juice, raw
parsley, fresh
salt, table
Directions:
Dredge pork in flour.
Heat oil in a large nonstick skillet.
Add pork and cook until browned on both sides.
Remove.
Stir together the cornstarch, chicken broth, lemon juice, and parsley.
Simmer 1 minute.
Spoon over pork.
