Gingered Jerusalem Artichokes

Ingredients:
artichokes, (globe or french), raw
butter, without salt
spices, ginger, ground
apple juice, canned or bottled, unsweetened, without added ascorbic acid

Directions:
Wash & Scrub Jerusalem artichokes, slice 1/4 thick.
In a large skillet cook and stir artichokes in hot butter over medium heat for 5 to 6 minutes or until CRISP tender.
Add ginger, cook for 30 seconds, remove from heat; stir in Marsala.
Season to taste with salt, enjoy.
