Caribbean Pina Colada/Pinada
Ingredients:
water, bottled, generic
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
pineapple juice, canned or bottled, unsweetened, without added ascorbic acid
Directions:
1.
Place ice in a blender.
2.
Pour in the cream of coconut.
3.
Then pour the pineapple juice on top.
4.
Blend until all the ice has been crushed and the ingredients are well mixed.
5.
Take a quick taste.
If you like more of a creamy coconut flavour, add more cream of coconut.
If its too sweet and you like a little more pineapple, add some more of that instead.
Blend for a few more seconds for good measure.
6.
Pour into a tall glass, garnish with a pineapple chunk, or a drink umbrella.
Add a straw and sit back, relax, and escape to the perfect at-home beach retreat.
For other interesting twists, trying adding 1/4 a lime (peel and all), a few frozen strawberries, or a banana.
