Pretzels

Pretzels
Ingredients:

water, bottled, generic
wheat flour, white, all-purpose, unenriched

Directions:
In a large Bowl dissolve the yeast, brown sugar and salt in the 375 ml warm water.
Add the flour and knead dough on a floured surface until smooth and elastic (at least 5 min).
Grease and leave to rise in a bowl, covered for about 1 hour.
After the hour passed, mix half a liter of warm water with the baking soda in a pan.
Cut dough into 12 pieces (or 24 if you want them a smaller size).
Roll each piece into a 30 cm rope as thin as you prefer them.
Twist into a pretzel shape, and dip into the soda solution.
Place on baking paper on a baking tray and let to rise for 20 minutes.
After they are baked, brush with melted butter and sprinkle with kosher salt.

Pre-heated oven at 230 degrees C in the middle of the oven until golden brown.
