Pepper-Crusted Flank Steak

Ingredients:
beef, flank, steak, separable lean and fat, trimmed to 0" fat, all grades, cooked, broiled
salt, table
spices, pepper, black
oil, olive, salad or cooking

Directions:
Preheat oven to 400F Rub steak on both sides with salt and pepper.
Warm oil in a large ovenproof skillet over medium-high heat.
Add steak and cook until browned on 1 side, about 1 minute.
Carefully flip steak and cook until browned, about 1 minute longer.
Transfer skillet to oven and cook steak to desired doneness - 6 to 8 minutes for medium-rare.
Transfer steak to a cutting board, tent with foil to keep warm and let stand for 5 minutes before slicing and serving.
