5 fat (2.25 kg) of clean mussels, scrubbed, debearded and rinsed effectively
2 bay leaves
A handful of new thyme sprigs, fifty percent entire, 50% finely chopped

A 12-ounce (375 mL) can of unsweetened evaporated milk
A handful of fresh parsley leaves, chopped
