Orange Walnut Conserve
Ingredients:
orange juice, raw
water, bottled, generic
raisins, seeded
nuts, walnuts, english
Directions:
Finely grate orange peel and set aside.
Remove remaining pith and
discard.
Chp flesh and discard seeds.
In a large saucepan cook orange flesh and water over low heat for 30
minutes.
Remove from heat.
Measure 5 cups pulp.
Add water if necessary
to make correct measure.
Prepare jars, lids and bands.
In a large saucepan cook pulp, reserved peel, raisins and sugar over low heat.
Stir until sugar dissolves.
Increase heat and bring to a rapid
boil.
Boil hard for 20 minutes.
Stir in walnuts and bring to a boil again.
Ladle into prepared jars leaving a 1/4" headspace.
Process jars for 10 minutes in a boiling water bath.
Adjust time according to your altitude.
