Jersey Wonders
Ingredients:
1/4 pound powdered sugar
1/4 pound best butter
4 eggs, well beaten
1 pound white flour
Grated nutmeg
Lard, for frying
Powdered sugar, for sprinkling
Directions:
1. Work the sugar and butter together until well combined. Beat in the eggs.
2. Sift in the flour gradually with a grating of nutmeg. Knead a while, cover and leave in a warm place.
3. Cut into pieces the size of an apple, roll into balls, then roll each into an oval 1/3 to 1/2 inch thick.
4. Cut 3 parallel slits in the middle of each, not through the ends. Cross the strips with your fingers and pull the sides through.
5. Fry in boiling lard; they rise when done. Turn to brown evenly.
6. Drain and sprinkle lightly with powdered sugar.
