Classic Tofu Steak With Mushrooms
Ingredients:
2 tablespoons soy sauce
1 teaspoon toasted sesame oil
1 tablespoon rice wine vinegar
Directions:
Several dashes hot sauce
1⁄ pound firm tofu steak, pressed
4
2 tablespoons peanut or olive oil
1⁄ cup mushrooms, sliced
4
1⁄ teaspoon salt
4
1 green scallion, thinly sliced
1. Combine the soy sauce, sesame oil, rice wine vinegar, and hot sauce in a small
bowl. Place the drained tofu steak in the sauce and let it rest in the refrigerator
for 1–24 hours.
2. Place a small skillet over medium heat. Once it is heated, add 1 tablespoon of the
oil and the mushrooms. Sprinkle the salt over the mushrooms and toss to
combine. Cook for 4 minutes.
3. Remove the mushrooms from the skillet and add the remaining oil. Remove the
tofu from the marinade and place it in the skillet. Cook on each side for 2
minutes.
4. Return the mushrooms to the skillet. Pour the marinade over the steak and cook
until the mushrooms have warmed and the sauce has reduced. Sprinkle with
chopped scallion and serve while warm.
Tofu Requires Extreme Flavor
Tofu is very low in fat, very high in protein, but very bland by itself.
Marinating firm tofu in a very flavorful sauce and then pan-frying is the
fastest cooking technique. When trying to flavor tofu, use a more strongly
flavored sauce than you would if using chicken. Many Asian bottled sauces
are great as a tofu marinade.
