Fine Unsweetened Hoecakes
Fine Unsweetened Hoecakes
Ingredients:
1 cup cornmeal
2 teaspoons baking powder
½ teaspoon fine sea salt
2 tablespoons sugar
1 cup plus 2 tablespoons unsweetened plain almond milk
1 teaspoon apple cider vinegar
1 tablespoon canola oil
Directions:
Warm a griddle or large skillet over medium heat.
Combine the cornmeal, baking powder, salt, and sugar in a medium bowl. Create a
well in the center of the flour mixture and add milk, vinegar, and canola oil. Stir until
completely smooth.
Spray the hot griddle or skillet with nonstick cooking spray and ladle ¼ cup of
batter at a time onto the griddle, making sure to leave room for the batter to spread.
Cook until bubbles form on the top, then flip and cook until the bottom is slightly
browned, about 2 to 3 minutes per side.

MAKES APPROXIMATELY 12 WAFFLES
I’m not sure exactly when carbs became the evil stepmother of the weight loss
world, but I promise that you can lose weight and still eat your fill of pancakes,
bread, and, most important, Banana Nut Waffles. At only 102 calories each, these
waffles are waistline friendly and full of flavor. Because they are sweet and rich,
with a bit of texture from the pecans, they don’t need much in the way of maple
syrup and require no margarine at all.
