Hot Tea, Afternoon Tea and Iced Tea
Hot Tea, Afternoon Tea and Iced Tea
Ingredients:
2 tablespoons tea
1 quart boiling water
Sugar, cream, lemon slices or mint leaves, for serving
Directions:
Scald the teapot. Put the tea into the pot and pour the boiling water over it.
Let stand 3 minutes. Strain the tea from the leaves and serve at once.
Afternoon tea: Put 1 or 2 teaspoons of tea in a tea ball, place it in a cup, and pour freshly boiled water over it. Remove the ball when the tea reaches the desired strength.
Iced tea: Make the tea double strength. Strain from the leaves and let cool. Pour into glasses of cracked ice and serve with sugar and slices of lemon or mint leaves.
Left-over tea poured off the leaves right away can be used for iced tea or combined with fruit juices in cold drinks.
