Guava-Glazed Pork Chops

Serves 4

Ingredients:
4 (10- to 12-ounce) double-cut pork chops
1 cup Jamaican marinade
Vegetable oil, for the grill

Guava Glaze:
1 cup frozen guava fruit pulp
2 cups barbecue sauce
1 teaspoon Cajun seasoning mix
1/2 teaspoon kosher salt

Directions:
1. Do ahead: Make the Jamaican marinade and refrigerate until ready to use.
2. Do ahead: For the Guava Glaze, whisk together the guava pulp, barbecue sauce, Cajun seasoning and salt. Refrigerate until ready to use.
3. Marinate the pork chops in 1 cup of the marinade at least 4 hours in the refrigerator, making sure the marinade completely covers the meat.
4. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.
5. Shake the excess marinade from the chops and grill, turning once, until cooked through. Medium-rare, still pink in the center, is acceptable. If you want well-done pork, butterfly the chops before marinating.
6. Baste the chops frequently with the Guava Glaze as they cook. Let rest at least 10 minutes. Serve hot.

Tip:
Be very careful when handling hot chilies such as the habanero (Scotch bonnet) used in Jamaican marinade. Wear disposable gloves and keep the juices and seeds away from you.
