Oven-Barbecued Pork Chops
Oven-Barbecued Pork Chops
Ingredients:
· 4 bone-in 3/4-inch thick pork chops (about 1 1/2 pounds)
· 1/4 teaspoon salt
· 1/4 teaspoon freshly ground black pepper
· 1 tablespoon plus 1 teaspoon olive oil
· 1 medium onion , diced
· 3 cloves garlic, minced
· 1/3 cup orange juice
· 1/2 cup low-sodium barbecue sauce
Directions
1. Preheat oven to 400 degrees F.
2. Heat 1 tablespoon olive oil in ovenproof skillet over high heat. Add pork chops,
season with salt and pepper, and cook until browned, 1 to 2 minutes per side.
Transfer to plate.
3. Add remaining 1 teaspoon olive oil to pan. Add onion and garlic and cook, stirring,
until softened, 3-4 minutes. Add orange juice and continue cooking until most of
liquid is evaporated, 2-3 minutes. Add in barbecue sauce, stir.
4. Return pork chops to pan, turning to coat with sauce.
5. Transfer pan to oven and bake until pork chops are cooked (internal temperature of
145 F), about 7-8 minutes.
6. Serve pork chops topped with sauce.
