Wholesome Chocolate Mousse

Wholesome Chocolate Mousse

Ingredients:
5 dates, pitted
½ cup boiling water
¼ cup chocolate chips
¼ cup almond milk
2 ripe avocados, pitted and peeled
½ cup unsweetened cocoa powder
2 tablespoons maple syrup
1 teaspoon instant coffee
2 teaspoons pure vanilla extract

Directions:
Pinch of kosher salt
Put the dates in a small bowl and cover with boiling water. Set aside to soak for 10
minutes. Meanwhile melt the chocolate chips in a double boiler. Stir until completely
melted. Set aside to cool.
After the dates have soaked, drain them and put them in the blender and pulse several
times. Add the almond milk, avocados, cocoa powder, maple syrup, coffee, vanilla, salt,
and cooled chocolate chips. Blend until smooth.
Spoon the mixture into small 4-ounce ramekins and chill for at least 2 hours.
Blueberry Cheesecake Bites
makes 30 bites
Instead of making a traditional cheesecake crust using graham crackers, I like to use oaty
British digestive biscuits, such as HobNobs. Many types of cookies will work, though—
chocolate wafers, gingersnaps, and plain butter cookies. Weetabix cereal biscuits are
another grainy option.
