Creamy Cauliflower Mash

Ingredients:
1 head cauliflower, cleaned, cored, and cut into florets
1 garlic clove, peeled
1 tablespoon cream cheese
2 tablespoons grated Parmesan cheese
3 tablespoons milk
½ teaspoon kosher salt

Directions:
Freshly ground black pepper to taste
Bring a large pot of water to a boil. Add the cauliflower florets and garlic clove. Bring the
water back to a boil then reduce the heat to medium-low and simmer for 8 minutes.
After 8 minutes, check that the cauliflower is fork-tender. If not, continue to cook until it
is. Drain well.
Add the drained cauliflower, garlic clove, cheeses, milk, and salt to the blender pitcher.
Run on medium for 30 seconds, using a spatula to scrape down the sides of the pitcher as
necessary.
Pour the mash into a serving bowl. Add black pepper to taste and stir well.
Fresh Corn Cakes
makes 12–15 cakes
These gluten-free corn cakes are not to be confused with corn fritters. They’re flatter, more
like pancakes. The binders here are fresh-ground cornmeal (), eggs, and ricotta.
The cornmeal does give these cakes some texture. If you prefer a finer consistency, replace
all or half the cornmeal with all-purpose flour. Either way, the focus is truly on the corn.
