CHAPTER 6
Dips and Salsas
The blender certainly comes in handy when it comes to entertaining. Within
minutes, you can have a table full of spicy salsas and satisfying dips that will be more
flavorful and nutritious than store-bought spreads, especially because you can alter these
recipes to suit your tastes. Just a little more mango and eliminate the cilantro. Yes, more
sesame oil please. Whatever your preference, make the recipe as written, then make
adjustments for your taste, little by little. A pinch of something goes a long way in the
blender.
Dips never go out of style. They are universally loved. They can get a party started or
turn some simple vegetables into a leisurely picnic. They can be made in advance and feed
plenty of guests.
Many of these recipes work as sandwich spreads, too. A thick smear of smoky
hummus layered with crunchy vegetables on hearty 12-grain bread makes a delectable
lunch, as does a warm, crusty baguette topped with roasted garlic bean dip, cherry-red
tomatoes, and vibrant green arugula.
Fresh Pineapple Mango Salsa
makes 2 cups
This salsa sings summer. It reminds me of eating dinner outside on the patio with candles
flickering just after sunset. On the menu: Grilled fish tacos. A warm corn tortilla stuffed
with grilled tilapia, shredded cabbage, a scoop of guac, and a nice big spoonful of
Pineapple Mango Salsa. It makes my mouth water just thinking about it.
