Cool Mint Slush

Ingredients:
1 whole lemon, cut into quarters, seeds removed
¾ cup freshly squeezed lemon juice (juice of about 3 lemons)
⅓ cup raw honey, or more to taste
¼ cup water
4 cups ice
½ cup fresh mint leaves, plus extra for garnish

Directions:
Add the cut lemon and lemon juice to the container and blend on medium-high until
smooth.
Add the honey, water, and ice and continue to blend until completely smooth.
Put the mint in the container and pulse five or six times, until the mint is chopped and
mixed throughout. Serve garnished with mint leaves.
Mango and Greek Yogurt Freeze

This drink delivers the essence of mangoes, which are at their best in spring and summer.
Mangoes that are green and hard should ripen after a few days at room temperature. The
feel and smell of the mango are much more important than the color. Never refrigerate
unripe mangoes. If ripe mangoes aren’t available, look for jarred mango in the produce
section or bags of mango chunks in the frozen food section, now available from Trader
Joe’s and Dole. When mangoes are in season (and usually on sale), I buy them in bulk, cut
the fruit into chunks, and freeze it in airtight containers.
