Black Bean Salsa
Black Bean Salsa
Ingredients:
1 cup corn
1 onion, diced
1 jalapeño, minced
3 cloves garlic, minced
3 teaspoons apple cider vinegar
2 teaspoons sugar
Directions:

1. Rinse the black beans, then soak overnight. Drain the water and rinse the beans
again.
2. In a large pot, add the beans and cover with water. Boil on high heat for 10 minutes,
then drain.
3. Add the black beans, water, and 2 teaspoons salt to a 4-quart slow cooker. Cover,
and cook on low heat for about 5–6 hours. Check the beans at about 5 hours and
continue cooking if necessary.
4. Once the beans are done, drain in a colander and allow to cool to room
temperature.
5. In a large bowl, combine the beans with the rest of the ingredients.

Homemade Chili Powder
Of course you can go to any store and buy chili powder in a bottle, but
where’s the fun in that? Making your own is easy and, best of all, you
can customize it however you like. Here’s a basic recipe, but feel free to
tinker with it and add more heat or use different types of chilies.
Yields 1 cup
4 dried ancho chilies, stemmed, seeded, and roughly chopped
4–5 dried chiles de árbol, stemmed and seeded
