Tuna with Creamy
Ingredients:
1 teaspoon salt
2 tablespoons (28 ml) olive oil
1 cup (120 g) drained jarred roasted red peppers

cup (188 g) refrigerated or jarred sundried
tomato Alfredo sauce
4 tuna steaks, each about 7 ounces (195 g)
and 1-inch (2.5-cm) thick
Combine the wasabi powder, water, and salt in a small bowl.
Let stand for 10 minutes to develop flavors. Add water, 1
tablespoon at a time to create a runny sauce. Pat dry the
tuna with paper towels and coat both sides with the wasabi
mixture.
Heat 1 tablespoon (14 ml) of the oil in a small saucepan
over medium heat. Add the roasted red peppers and cook
for 2 minutes. Stir in the Alfredo sauce and water and cook
2 minutes. Puree with a hand blender or in an upright
blender. Reduce the heat to low and keep warm.
Heat the remaining 1 tablespoon (14 ml) oil in a large,
heavy skillet over high heat. Add the tuna and sear until well
browned on both sides and red at the core (medium-rare),
about 3 minutes per side.
Spoon the sauce onto the plates and top with the tuna.
Prep =3 minutes Cook = 12 minutes
Yield = 4 servings

Tuna Cakes
Similar to crab cakes, these tuna cakes
pair well with tartar sauce. Or, make a
flavored mayonnaise by mixing 1/ cup (112 g)
2
jarred mayonnaise with 2 tablespoons (17 g)
drained and chopped capers, 1 tablespoon (14 ml)
olive oil, and the juice of half a lemon.
4 cans (6 ounces, or 170 g, each) water- or
oil-packed tuna, drained
