Microwave Deep-Fried Tuna With Spicy Garlic Sauce

Ingredients:
2 tablespoons soy sauce
2 garlic cloves, minced

Directions:
1⁄ teaspoon fresh ginger, grated

1⁄ cup sake

1 tablespoon fish sauce
1⁄ teaspoon chili sauce

1 tablespoon cornstarch
4 4-ounce tuna fillets
Pinch salt
Pinch pepper
1 quart vegetable oil
1. Combine the soy sauce, garlic, ginger, pepper, sake, fish sauce, and chili sauce in
a small bowl. Refrigerate overnight.
2. Just before cooking the tuna, stir cornstarch into the cold sauce. Warm the sauce
in a microwave or a small saucepan, stirring frequently to thicken. Sprinkle the
tuna lightly with salt and pepper.
3. Place a fryer over medium heat and add the oil. Once the oil is heated, add 2
pieces of tuna and cook for 1 minute. Remove them from the oil and pat dry with
paper towels. Repeat with the remaining tuna. Slice the tuna into 1⁄" slices and

pour the sauce over them. Serve while hot.
BATTERED CATFISH
When purchasing catfish fillets, look for pieces that weigh 3–5 ounces each. The
smaller pieces have less fatty tissue, which reduces the fishy taste. Remove any
black membranes from the fish before cooking.
