Cheese Quesadillas
Cheese Quesadillas
Ingredients:
12 flour tortillas (6" diameter)
2 cups tomato salsa (mild, medium, or hot), plus additional for serving
6 tablespoons chopped fresh cilantro
3 cups shredded Cheddar cheese
Directions:
Corn oil
PLACE 6 TORTILLAS on a work surface. Top each with some of the salsa, cilantro,
cheese, and remaining tortillas. Brush both sides of the tortillas with corn oil.
Heat a nonstick skillet over medium-high heat until a drop of water sizzles on the
surface. Working with one at a time, place a quesadilla in the skillet and cook until
golden brown on the bottom. Turn over and cook until the second side is golden.
Remove from the pan onto a cutting board and cut the quesadillas into wedges. Serve
with salsa for dipping.

GREEN TO COMBINE WITH FLAVORS FROM ITALY. ORZO IS PASTA THAT IS SHAPED LIKE
GRAINS OF UNHULLED BARLEY (THOUGH MOST PEOPLE THINK IT RESEMBLES RICE) AND
COOKS VERY QUICKLY. LIKE ANY PASTA, IT WILL TEND TO THICKEN THE SOUP UPON
STANDING.
Makes 4 to 6 servings
