Maine Corn Chowder

Maine Corn Chowder

Ingredients:
2 tablespoons butter
1 large sweet onion, chopped
1 teaspoon ground cumin
4 large Yukon Gold potatoes, peeled and cubed
2 cups fresh or thawed frozen corn kernels

Directions:
1½ cups half-and-half or whole milk, or 1 can (12 ounces) evaporated milk
½ teaspoon ground white pepper
Salt
HEAT THE BUTTER in a soup pot over medium heat. Add the onion and cook until soft,
about 10 minutes. Do not let the onion brown. Stir in the cumin.
Add the potatoes and just enough water to cover. Cover and simmer until the potatoes
are cooked, 20 to 25 minutes. Using a potato masher, mash the potatoes into small
chunks but not pureed. Add the corn, half-and-half or milk, white pepper, and salt to
taste. Serve hot.

MUFFIN LINERS WITH COOKING SPRAY SO THAT THE MUFFINS CAN BE REMOVED MORE
EASILY, BUT I HAVE FOUND THAT THE NATURAL BROWN MUFFIN LINERS DO NOT NEED TO BE
COATED.
