Spiced Chai
A warm, aromatic caffeine-free "tea" with a more complex flavor than store-bought chai. Add almond milk for creaminess if you like, but try it without first.
Serves 2
Ingredients:
4 cups water
1 large piece fresh ginger, peeled and sliced
8 cardamom pods, cracked
1 bay leaf
4 whole peppercorns
1 tablespoon pure vanilla extract
1/2 teaspoon fennel seeds
4 whole cloves
Directions:
1. Put all the ingredients in a pot and bring to a boil. Cover and simmer at least 20 minutes, longer for a stronger flavor.
2. Strain through a strainer or cheesecloth, pour into mugs and serve hot.
